First up on the docket were these delicious peach oat cookies:
- 1/2C whole-wheat flour
- 1tsp baking soda
- 1dash - 1 tsp salt
- 4 tsp cinnamon
- 3/4 Packed (dark) brown sugar
- 1/2C raw or refined sugar
- 1C butter, softened (or melted if you're an air-head like me)
- 2 eggs, beaten
- 1 tablespoon vanilla (yes, tablespoon)
- 3C large flake rolled oats
- 1 peach, cubed and let sit on paper towel for up to 1 hour before baking
- Preheat oven to 375F (190C)
- Combine dry ingredients except for the oats in a bowl and mix. This step will help you get rid of any clumps in the dry ingredients (especially brown sugar). Add in the wet ingredients (except peaches) and beat until smooth. Add in oats, mix again, then add peach cubes.
- Using any left over butter, grease the pans. Ball dough, and place on cookie sheet (these won't expand much)
- Bake for 8-12 minutes.
