Peach Cookies + canned fruit smoothie

As I'm attempting to clean out my apartment of everything that is ill-fitting, half-empty or useless, I'm probably going to be baking a lot.

First up on the docket were these delicious peach oat cookies:

  • 1/2C whole-wheat flour
  • 1tsp baking soda
  • 1dash - 1 tsp salt
  • 4 tsp cinnamon
  • 3/4 Packed (dark) brown sugar
  • 1/2C raw or refined sugar
  • 1C butter, softened (or melted if you're an air-head like me)
  • 2 eggs, beaten
  • 1 tablespoon vanilla  (yes, tablespoon)
  • 3C large flake rolled oats
  • 1 peach, cubed and let sit on paper towel for up to 1 hour before baking

  1. Preheat oven to 375F (190C)
  2. Combine dry ingredients except for the oats in a bowl and mix. This step will help you get rid of any clumps in the dry ingredients (especially brown sugar). Add in the wet ingredients (except peaches) and beat until smooth. Add in oats, mix again, then add peach cubes.
  3. Using any left over butter, grease the pans. Ball dough, and place on cookie sheet (these won't expand much)
  4. Bake for 8-12 minutes.

I know, I know, beautiful photo editing job. Thank you all so kindly.

Next, because I had finished mango spears earlier today and I have stress dreams about the upcoming move resulting in damaged valuables, I also wanted to get rid of my canned peaches, I put 1/2 in the freezer and 1/2 in the fridge (likely for more baked goods). Half of the half in the freezer went into making this delicious smoothie! Frozen peaches, the "water" the magos were in, and less than 1/4 scoop of protein powder, blended.

Mmm Delicious <3

until Next time,

New endings

I'm getting ready to move out of my apartment on vine street that I have been subletting from Evelyn and Taylor (my frosh leaders!) and preparing to move into Guelph all the while making the gradual departure from my 797 house in Pickering, and then back into a friends house in Pickering???

Basically I'm homeless but I have been very fortunate in meeting people who really care about me. I'm hoping to learn how to learn off of minimal amounts of things (which will be very hard for me!) cope with shedding all of my childhood skin by September (which will be even harder!), and then venturing to France (definitely the easiest of all).

Allons-y!
